Green Beans with Bacon & Pine Nuts

I have been sitting on this simple recipe for a while, and to be honest, I have no reason for sharing it other than that it is Monday, so here we are.

I love green beans as a side dish, and sometimes when I am in a rut with veggies, dressing up some green beans helps me get out of it. I always forget how much I enjoy the flavor of green beans, and accidentally end up eating most of them as I am making them. These are a great side with any meat, and they are a great, easy holiday side dish. Whip some up this New Year’s Eve, or tuck this one away for next year’s holiday gatherings!

RECIPE (Serves 4)

INGREDIENTS:

  • 1 package green beans⠀
  • 4-5 slices bacon, chopped⠀
  • 1 tbsp lemon juice (or juice of 1/2 lemon)⠀
  • 1/4 cup pine nuts⠀
  • Salt and pepper to taste⠀

DIRECTIONS:

Rinse and trim the ends of your green beans, and set aside. Heat a pan on medium heat, and then add your chopped bacon. Cook until bacon is *almost* done, about 4-5 mins. Add your green beans, pine nuts, and lemon juice, and toss to coat. Cook until pine nuts start to toast and/or your green beans start to blister, about 2 mins or so. Remove from heat, and add salt and pepper to taste. Serve and enjoy!
